    What do you do to pay the bills?
    I am a Culinary Professor as well as Culinary Internship Co-ordinator at Humber College in Toronto....


    Why am I asking you questions?
    Because you are curious about what makes people tick? ;-)


    What does Soul Food mean to you?
    Soul Food is anything that gives you that warm fuzzy feeling inside.... Like the chicken noodle soup like my Mom makes it.... or the real dutch applepie.... it just brings a big huge smile to your face! Mostly because of the momories it brings along... it's not just about the food but also about the experience ....


    If you could create any food and music experience what would it be?
    A sunny French Bistro table with Edith Piaf in the background singing "Quand le Soleil..." paired with some delicious french food and wines....


    Kosher or Sea Salt?
    Sea salt ... fresh from the grinder ..... (sigh)


    Wine or Cocktails?
    Both..... my favorite though is Sangria on a hot muggy night.... HEAVEN!


    Prosciutto or Spam?
    Spam really???? Come on..... how about Serrano......


    Who is your favorite Iron Chef?
    Bobby Flay.... hands down...


    What is your favorite thing to smoke?
    Rabbit loin....


    What is your favorite music to listen to while cooking, after Soul Food of course?
    Norah Jones and Alicia Keys...not just listen but sing and drum with wooden spoons too hahahaha...... Get totally caught up in it.....


    Top 3 food experiences after Nyood, Kultura and Madras Pantry of course?
    The most special one was a dinner with College students at Auberge du Pommier. Chef Jason Bangerter had helped me to organise a very nice 8 course tasting menu at cost so the students could experience fine dining...... It exceeded all expectations... Jason came by prior to each course being served to tell about the dish and the students were having such an amazing experience.... One of the highlights of my teaching career...to watch the students enjoy it so much and soak it all up..... AWESOME!!!!
