'cause we had a very good time and some awesome food in Kultura the other
night
What does Soul Food mean to you?
Just discovering it, but I guess it is when the food gives you a special
energy very different from just glucose and ATPs.
If you could create any food and music experience what would it be?
It would have to be in Brazil with batucada in the kitchen and bossa nova
while eating it.
Kosher or Sea Salt?
Mediterranean.
Wine or Cocktails?
Wine.
Prosciutto or Spam?
Last (and only) time I had Spam was in Cuba after missing the restaurant
open hours for two days in a row and the Havana Club wasn't doing the job
anymore.
Who is your favorite Iron Chef?
My wife. She hits me with the iron pan when I'm bad.
What is your favorite thing to smoke?
Depends on the ambiance, but last memorable moment was at the Forum Shops in
Vegas where I smoked a wonderful Arturo Fuente. Or another one with my
friend Alberto on top of the world in Hong Kong.
What is your favorite music to listen to while cooking, after Soul Food of
course?
Opera.
Top 3 food experiences after Nyood, Kultura and Madras Pantry of course?
Cod with chorizo at The Modern in NY, Merluza at Combarro in Madrid, and I remember some orgasmic food I had in China somewhere near Shanghai
with a factory owner.
