    What does Soul Food mean to you?
    Any food that comes from the heart, that is symbolic of your family, your heritage, your upbringing. Any food that is made with love.


    If you could create any food and music experience what would it be?
    I am obsessed with music, so I’d say a summertime backyard party with a live band and plenty of tapas-inspired food going around family-style to all guests.


    Kosher or Sea Salt?
    Sea salt, definitely. It has better flavour and texture.


    Wine or Cocktails?
    Wine: Deep Borollo’s; heavy Malbecs ... Cocktails has to be Proseco!


    Prosciutto or Spam?
    Spam. Kidding. Prosciutto is a breakfast, lunch and dinner mainstay at my house.


    Who is your favorite Iron Chef?
    That’s a tough one: I love Mario Batali’s style of cuisine: Simple, yet fresh and current ingredients; he never tries to reinvent the wheel too much, or try too many things on one plate. He has a very refined way of cooking. But, I’ve really grown to love Bobby Flay as well. I used to think he was all attitude all of the time, but over the years he’s really mellowed out and I think he appeals to the home cook.


    What is your favorite thing to smoke?
    Food, or otherwise?? Again, kidding. Smoked seafood, of any kind, is my favourite. Without question.


    What is your favorite music to listen to while cooking, after Soul Food of course?
    Everything: Kings of Leon, The Stars, Supergrass, Ben Harper, The Raconteurs, Sam Roberts, you name it ...


    Top 3 food experiences after Nyood, Kultura and Madras Pantry of course?
    My brother is a chef, so I’d have to say eating rack of lamb and plates and plates of fresh king crab legs at his restaurant. The Grinning Gourmand (www.thegrinninggourmand.com). Next would be La Forchetta (Little Italy, Toronto) for their incredible homestyle Italian-fare (best Boulliabase in town!); and lastly, La Salle a Manger in Montreal. The coolest restaurant in the city with incredible food.
