What do you do to pay the bills?
Whatever it takes to be able to enjoy the one life I have. Seriously though, I get to talk to passionate people about great cheeses and unique foods, for Finica Food Specialties.
Why am I asking you questions?
To find out what makes different people click and see the world through a different set of eyes.
What does Soul Food mean to you?
Soul food to me is comfort food, food of my youth, sitting at the table with my parents, siblings and relatives and enjoying each others company. Talking but not talking about anything important.
If you could create any food and music experience what would it be?
I have always enjoyed jazz, Holly Cole is one of my favourite artists, her personality and fun spirit comes through her music. Eating a nice meal with my special woman, with a great glass of wine, quiet conversation and some jazz in the background. I am not sure if there is anything that would make me happier.
Kosher or Sea Salt?
Sea salt for me, thanks.
Wine or Cocktails?
A nice glass of red wine or a great Spanish Barola. But if you give me a nice spicy Caesar, I cannot say no.
Prosciutto or Spam?
Nothing like a good slice of Prosciutto, sweet and salty just cut off the leg. I never had Spam as a child, I guess the result of growing up in a traditional Chinese family, it was either rice or noodles but never Spam.
Who is your favorite Iron Chef?
Chen Kenichi, the King of Szechuan, I love spicy food and watching him taste his dishes by dipping his ladle into the sauce, bringing it to his mouth for a taste and then putting it back. I love that.
What is your favorite thing to smoke?
Give me a piece of brisket anytime, let it smoke overnight and then just pull the meat apart, absolutely, anytime.
What is your favorite music to listen to while cooking, after Soul Food of course?
It depends on my mood and who is joining me. If it is a big party for family and friends, I need something livelier to keep me going ( 5440 or Spirit of the West) but if I am cooking a romantic quiet dinner, I like to listen to Holly Cole or Norah Jones to set the mood.
Top 3 food experiences after Nyood, Kultura and Madras Pantry of course?
1) Christmas dinner at my sisters house with my siblings, their kids, my parents and friends, amounting to around 40 people. Great food, great drinks and great conversation, you just cannot beat it.
2) Any meal that has Porchetta as part of the menu or there is a pig roasting nearby, let me at it.
3) Any small Mom and Pop restaurant/diner where the food is homemade, nothing beats a good meatloaf or hot turkey sandwich with mash potatoes and gravy made from scratch. I�ll take that over any 2 or 3 star Michelin restaurant anywhere in the world.
